How We Make Our Salt
At Olsson's Salt, we take pride in creating our Sea Salt using a traditional and meticulous process

Sourcing: We begin by having high-quality seawater from pristine coastal regions. The purity and mineral content of the seawater contribute to the unique flavors and characteristics of our salt.

Evaporation: The seawater is carefully evaporated, through a succession of ponds by natural solar evaporation. This process allows the water to gradually evaporate, leaving behind the salt crystals.

Harvesting: As the water evaporates, delicate salt crystals begin to form. Our skilled salt harvesters collect the salt crystals from the salt pans, where they have naturally settled. This harvesting process requires precision and expertise to ensure that only the purest salt crystals are collected.

Washing and Drying: The harvested salt crystals are then meticulously washed with sea water. After the washing process, the salt crystals are dried to the perfect moisture level, preserving their natural flavor and texture.

Quality Control: Throughout the entire process, we maintain strict quality control measures to ensure that our Sea Salt meets the highest standards. Our experts carefully monitor the salt for purity, consistency, and flavor profile.

Made from the most pristine bodies of water

Whyalla, South Australia

Olsson’s Salt derives its gorgeous solar sea salt from the vast tidal flats of False Bay on the Eyre Peninsula, South Australia.

At the Spencer Gulf Salt Works, the company relies on just three essential elements: sun, wind, and seawater, all of which are bountiful in the area. With over 300 days of sunshine each year and generous wind currents that even make nearby Whyalla a prime location for the Australian kite-boarding championships. The cold seawater, sourced from the Leeuwin and circumpolar ocean currents that travel up north, combines with the abundant sun and wind to create one of the world’s most stunning and natural sea salts.

Port Alma, Queensland

Olsson’s Salt sources its sea salt from the Great Barrier Reef, specifically the Port Alma Salt Works in Queensland. This site is located between two landmarks: the world heritage Heron Island group and the Fitzroy River mouth with its immense 10-meter tides. The Casuarina Creek runs through this region, and Olsson’s Salt Works was constructed by Charles, Malcolm, and Don Olsson in the 1980s on mangrove mud flats next to this creek. The result is a sea salt that is rich in marine minerals, retrieved through Olsson’s natural and sustainable solar evaporation process.
