SMASHED POTATOES WITH RARE DRY GIN SALT
Serves 4
Ingredients:
-
Mini White Potato 1kg
-
Sour Cream 125g
-
Mayonnaise 40ml
-
Olive Oil 20g
-
Sea Salt, 2tsp
-
Fresh Chives chopped, ¼ cup
-
Four Pillars Rare Dry Gin Salt, 2tsp
Directions:
-
Preheat Oven and Prepare Baking Sheet: Preheat the oven to 200°C (392°F). Line a baking sheet with parchment paper.
-
Wash and Boil Potatoes: Wash the potatoes thoroughly. Heat a large pot of water over high heat. Once the water is bubbling, add sea salt and the potatoes. Boil the potatoes for 20-25 minutes, until they can be easily pierced with a fork.
-
Smash the Potatoes: Drain the potatoes and pat them dry. Transfer them to the prepared baking sheet. Using the back of a flat glass, press down on each potato to "smash" it. Repeat for all the potatoes.
-
Season and Bake: Drizzle the smashed potatoes with olive oil and sprinkle with Rare Dry Gin Salt. Bake in the preheated oven for 25 minutes, or until the potatoes are crisp and golden.
-
Prepare Chive Cream: In the meantime, in a bowl, mix together the sour cream, mayonnaise, chives, and 1 teaspoon of Rare Dry Gin Salt.
-
Serve: Transfer the crispy smashed potatoes to a serving dish and drizzle the chive cream over the top.
