SMASHED POTATOES WITH RARE DRY GIN SALT

Serves 4

Ingredients:

  • Mini White Potato 1kg

  • Sour Cream 125g

  • Mayonnaise 40ml

  • Olive Oil 20g

  • Sea Salt, 2tsp

  • Fresh Chives chopped, ¼ cup

  • Four Pillars Rare Dry Gin Salt, 2tsp

Directions:

  1. Preheat Oven and Prepare Baking Sheet: Preheat the oven to 200°C (392°F). Line a baking sheet with parchment paper.

  1. Wash and Boil Potatoes: Wash the potatoes thoroughly. Heat a large pot of water over high heat. Once the water is bubbling, add sea salt and the potatoes. Boil the potatoes for 20-25 minutes, until they can be easily pierced with a fork.

  1. Smash the Potatoes: Drain the potatoes and pat them dry. Transfer them to the prepared baking sheet. Using the back of a flat glass, press down on each potato to "smash" it. Repeat for all the potatoes.

  1. Season and Bake: Drizzle the smashed potatoes with olive oil and sprinkle with Rare Dry Gin Salt. Bake in the preheated oven for 25 minutes, or until the potatoes are crisp and golden.

  1. Prepare Chive Cream: In the meantime, in a bowl, mix together the sour cream, mayonnaise, chives, and 1 teaspoon of Rare Dry Gin Salt.

  1. Serve: Transfer the crispy smashed potatoes to a serving dish and drizzle the chive cream over the top.
